Peaches and Pie, Oh My!!!

Last week my dear friend Jim went over the pass...to do his lobbying thing. He knows how much I appreciate the fruit that is produced in  wonderful Eastern Washington. He brought back some amazing peaches and apricots. Deliciousness...
I wish you could smell them...oh, they smelled heavenly! What to do with them...?...it was Jims' Mothers birthday so we decided on a pie. I'm not a maker of pies but was excited to give it a try...As you can see, there is a great crust being rolled out. I'm new to the pie crust thing and was given a recipe two years ago by a woman in a little town on our way to Chelan.

As you can see, the peaches are overflowing my crust! I had to use tapioca and some flour and some spices. It was just smelling more yummy to me at every roll. I had to enlist the help of the husband to help with the "lattice top" having NEVER done this before. Did I mention my little experiance with Pies?

We ended up with two (2) delicious pies...I mean delicious...my husband said it was the best as well as Jims' Mom said how delicious the pie was. I have never made a peach pie from fresh peaches...Yummy!!! I need practice with the crust and the artistic crust but I think I'll get it!!
